Instructions
- Prep the ribs
- Remove the thin membrane from the bone side of each rack. Brush lightly with olive oil. In a small bowl, mix brown sugar, paprika, garlic powder, onion powder, black pepper, salt, chili powder, and cayenne. Rub all over both sides of the ribs.
- Heat your grill/smoker
- Set to 120°C/250°F for indirect cooking. If using an oven, preheat to 140°C/285°F.
- Cook the ribs
- Place ribs bone-side down. Grill or roast, covered, for 2 hours, turning once halfway.
- Make the sauces
- While ribs cook, combine all ingredients for each sauce in separate saucepans. Simmer each over medium-low heat for 10–15 minutes, stirring occasionally. Adjust seasoning to taste.
- Glaze the ribs
- After 2 hours, brush ribs generously with your choice of sauce (or a mix). Increase heat to 190°C/375°F. Grill or bake for 20–30 minutes more, basting once. Ribs should be deeply glazed and very tender.
- Rest and slice
- Rest ribs loosely covered for 10 minutes. Slice into individual ribs.
- Assemble the rib board
- Arrange sliced ribs on a large platter or board. Serve each sauce in small bowls with spoons. Garnish with pickles, cornbread, herbs, and onions if desired.
- Serve
- Serve immediately and enjoy with sides of your choice.
Zusatztipps für die Zubereitung
For the best results, remove the membrane carefully to ensure tenderness. When smoking, adding soaked wood chips enhances the smoky flavor. Simmer sauces gently to balance sweetness and spice, tasting as you go. If baking, use a roasting pan with a lid or foil to maintain moisture during the initial cooking stage.
Varianten und Anpassungen
Swap pork ribs for beef ribs if you prefer; note that beef ribs will require longer cooking times to become tender. You can also adjust the heat level by varying the amount of chipotle peppers or cayenne powder. For a vegetarian option, try substituting ribs with grilled portobello mushrooms though the texture and flavor will differ.
Serviervorschläge
This rib board shines when paired with classic sides like creamy coleslaw, baked beans, or a fresh green salad. Complement with sliced pickles, cornbread, and fresh herbs for brightness and crunch. A bold red wine such as Zinfandel or Shiraz, or a cold beer, round out the perfect Father's Day meal.
